With mornings being so rushed getting everyone dressed, lunches ready, fed and out the door for school, I've been keeping my breakfast pretty simple and starting the day with a smoothie. What I love about smoothies is that you can pretty much toss any fruits and veggies in and they taste pretty darn good. Today's smoothie was made with:
- 1/2 cup packed fresh spinach
- 1 banana
- 1 cup frozen peaches with a few blueberries and strawberries
- 1 cup almond milk
- 1 tbsp hemp seeds (ETA: I used chia seeds in this smoothie, but hemp is good too!)
- 1 cup ice
After breakfast we headed out the door for school drop off.
Once back home, I made a mocha tea latte and searched some cookbooks for dinner ideas. Oh and yes, that jar is full of more mocha tea latte to enjoy later. :-) I've been making a big batch to keep in the fridge so I can quickly warm it up, add some steamed almond milk and enjoy anytime!
Then time for a little baking - the best vegan Double Coconut Blueberry Muffins ever! You can get this amazing recipe from here and even if you're not a vegan you'll absolutely love these muffins!
Next on today's to do list are to make these yummy Banana Bread Protein Bars, but first I think it's time for another blueberry muffin and some more mocha tea latte. :-) Hmmm...I think I forgot lunch?
