I love these chocolate chip cookies for so many reasons, but mostly I love them because they remind me of my grandpa. This is my grandma's recipe and she would make them all the time for my grandpa because they were his favourite. They are now my favourite too!
Grandma's Chocolate Chip Cookies
- 2 cups flour
- 1/2 tsp salt
- 2 cups rolled oats
- 1/2 cup coconut
- 1 tsp vanilla
- 1 cup shortening or margarine or Earth Balance
- 1 cup brown sugar
- 1 tsp baking soda
- 1/4 cup hot water
- 1 pkg chocolate chips (vegan or milk chocolate)
Sift flour and salt. Mix with rolled oats and coconut. Cream shortening and blend in sugar. Cream together well. Dissolve baking soda in water. Stir into creamed mix and add vanilla. Mix in flour and add chocolate chips. Scoop out onto a baking sheet and flatten with a fork dipped in cold water. Bake at 350 F until golden brown (approx. 12-15 minutes). Let cool and enjoy!
More reasons I love these cookies ~ my girls can safely eat the raw cookie dough because there are no eggs in it and you can easily make them vegan by using vegan chocolate chips and Earth Balance, but most of all the number one reason I love them...because they taste AMAZING!
